A pangasius or shrimp container that leaves a Mekong Delta cold store at a clean -20°C can still arrive with visible ice crystals and texture loss. In my years managing outbound reefer bookings for a European whitefish processor, the single biggest driver of buyer complaints was never the freezing process at the plant — it was what happened to the box between the factory gate and the discharge port.

Container type is not a formality

For frozen seafood, buyers should specify a high-cube reefer set to -18°C to -20°C, not a standard dry container with insulation blankets (still used by some smaller Vietnamese exporters on short regional routes to cut cost). A reefer holds temperature through a compressor and a controlled atmosphere setting; a blanket-lined dry box only slows heat gain; it does not stop it. On a 25-30 day transit to Northern Europe, that difference compounds daily.

Ask for the container's genset requirement in writing. Reefers need continuous power — either plugged into the vessel's reefer socket at sea, or running on a diesel generator (genset) during the inland truck leg from the Mekong Delta to Cat Lai or Cai Mep port, roughly 4-6 hours depending on the factory location. A genset-less truck leg in Vietnam's tropical heat is where I've seen the first temperature excursion happen, well before the container ever reaches the terminal.

Transit time drives risk more than distance

Based on the shipping lines I've worked with routing out of Ho Chi Minh City, typical transit times run: 2-4 days to Hong Kong or South China ports, 5-7 days to Japan (Yokohama/Kobe), and 25-32 days to Northern Europe via Suez, versus 35-40+ days on the Cape route when Suez is congested or avoided. Each additional week is another window for a reefer malfunction, a missed plug-in at a transshipment hub, or a defrost cycle that goes unnoticed on the data logger. Buyers sourcing IQF product for retail repack are more exposed here than buyers taking block-frozen product for further processing, because loose IQF pieces show freezer burn and clumping faster than a dense block.

What to request from the exporter

Three checks I recommend to every buyer before the container is sealed:

  1. A calibrated temperature data logger placed inside the pallet stack, not just the reefer unit's own reading at the door — the two can disagree by several degrees, and the unit reading is what most exporters send unless asked otherwise.
  2. Pre-cooling confirmation — the container should be run empty at set-point for a minimum of 30-60 minutes before loading, so the product isn't fighting a warm box on top of its own load.
  3. A named transshipment port and expected connection window, if the route isn't direct. Ports like Singapore or Port Klang are reliable; some regional feeder routes carry longer, less predictable dwell times where a reefer plug can be delayed.

The practical implication

None of this requires paying more for the product itself — it requires putting it in the shipping instructions before booking, not discovering the gap after a container arrives with a quality claim. When I've had buyers add data-logger and pre-cooling requirements to their standing PO terms, the rework and rejection rate on frozen product has dropped noticeably compared to shipments booked on the exporter's default routing.
